After the hectic months of summer holidays, followed by six intense weeks of harvesting the vintage 2011, it is time to get in touch with
you again.

We experienced a hot and windy summer in Franschhoek which resulted in up to 20% reduction in the crop. There was simply not enough humidity in the soil to grow the berries large and juicy. As farmers we always have to look on the positive side of nature's challenges, in this case being content with intensely flavourful juices that we managed to harvest early enough so the alcohols will remain on a moderate level. Elegant wines have always been our trade mark.

At the moment, Achim and Takuan are 'fine-tuning' the blends. Our three most popular wines - Pierre Jourdan Brut, Pierre Jourdan Tranquille and the Haute Cabrière Chardonnay Pinot Noir - are all blends of Chardonnay and Pinot Noir, creating the well loved and unique style of Haute Cabrière. As Achim likes to quote: "Style distinguishes the Champagne Houses of France; Chardonnay and Pinot Noir determine the style. Chardonnay contributes elegance and flavour, Pinot Noir intensity and richness". This is a delicate process, demanding the total attention of the cellarmasters for weeks on end. Should one of you, once again, drive past Achim in his Deux Chevaux in Franschhoek and feel hurt that he ignores your smile and wave, please forgive the man - his mind is fine- tuning his blends.

Haute Cabrière invites you to celebrate Easter with family,

Pierre Jourdan Belle Rose, our MCC with a blush of pink and yet dry enough to entice the more male palates and the Haute Cabrière Pinot Noir 2007, ready to be enjoyed now, would be our choice for Easter as both pair magnificently with Easter Lamb dishes. Both produced from 100% Pinot Noir, which has an elegant yet intense richness - showing
red berry fruit flavours and well structured complexity that will complement the flavours of Easter and cooler
autumn days.

RATAFIA EASTER EGGS



A further unique Haute Cabrière wine, blending in perfectly with the Easter celebrations, is Pierre Jourdan Ratafia. Enjoyed as an aperitif during the long months of cold weather in the Champagne region of France, whence we
got the recipe, but equally delicious as a digestif during the Cape's long summer months. Ratafia will either be the aperitif to welcome you to the celebration or help you
digest the great occasion!

To refresh your memory, Ratafia is ripe, rich Chardonnay juice fortified with our Chardonnay brandy and should be enjoyed in small quantities as the alcohol content is close
to 20% by volume.

In response to popular demand, we will have lovely dark chocolate Easter eggs again this year. Filled with a Ratafia-cream, these are simply irresistible! Available exclusively at the tasting room.
